Red Raspberry Dressing
Raspberries go fantastically in savory dishes like this one and add a fantastic vibrancy to the dressing. Both flaxseed oil and apple cider vinegar have amazing health benefits and are great to include in your diet.
Makes 3 cups, prep time 5 minutes.
1 cup flaxseed oil (or oil of your choice)
1 cup raw apple cider vinegar
4 cloves garlic
2 tbsp wholegrain mustard
2 tbsp honey
1 cup fresh or frozen raspberries
Mince garlic and in a food processor with all other ingredients, blend until smooth and emulsified, taste and add extra honey to your taste.
Store in airtight container in fridge for up to 1 week and pour generously over salads, sprouts, or sweetcorn.
